Ingredients:
Preparation:
- Garbanzo beans (chick peas) - canned organic or dry (soaked over night and cooked for 2 hours, cooled)
- Onion - One medium size, minced
- Garlic - 2 cloves, squeezed
- 1 cup Parsley + Cilantro, finely chopped
- Oil (Coconut or Olive) - about 2 table spoons
- Flour: 2 table spoons
- Spices,1 tsp of each: Ground Coriander, Ground Cumin
Preparation:
- Preheat oven to 350F.
- While oven is preheating, mash chickpeas with mortar and pestle or in food processor until a thick paste-like consistency.
- Take the chickpeas paste out in the large bowl. Add remaining ingredients and mix well.
- Drizzle olive oil evenly in shallow baking dish.
- Shape into ping pong size balls and place in baking dish. Brush each piece with a little bit of oil (olive or coconut)
- Bake for 20-30 minutes, turning halfway through cooking.
