Baked Falafel

Ingredients:
  • Garbanzo beans (chick peas)  - canned organic or dry (soaked over night and cooked  for 2 hours, cooled)
  • Onion - One medium size, minced
  • Garlic - 2 cloves, squeezed
  • 1 cup Parsley + Cilantro, finely chopped
  • Oil (Coconut or Olive) - about 2 table spoons
  • Flour: 2 table spoons
  • Spices,1 tsp of each: Ground Coriander, Ground Cumin

Preparation:

  • Preheat oven to 350F.
  • While oven is preheating, mash chickpeas with mortar and pestle or in food processor until a thick paste-like consistency.
  • Take the chickpeas paste out in the large bowl. Add remaining ingredients and mix well.
  • Drizzle olive oil evenly in shallow baking dish.
  • Shape into ping pong size balls and place in baking dish. Brush each piece with a little bit of oil (olive or coconut)
  • Bake for 20-30 minutes, turning halfway through cooking.
