Cottage Cheese Cookies

Ingredients:
  • 1 Cup (250 ml) of home made goat cottage cheese from raw goat milk,
  • 2 tbsp organic goat butter,
  • 1 free run egg,
  • 2 tbsp natural unrefined sugar,
  • 1/3 cup (80 g) of organic unbleached all purpose flour,
  • A few drops of organic vanilla extract,
  • A pinch of Himalayan pink salt, 
  • Baking soda with lemon juice.

Preparation:

  • Mix egg, sugar, butter, cottage cheese, add salt, vanilla extract and baking soda with lemon juice.
  • Add flour, if mixture is too liquid add more flour. 
  • Mix well, work with your hands, mixture should not be sticky. 
  • When dough is done, wrap it in plastic wrap and refrigerate for 2 hours or overnight before baking. 
  • Roll out dough on the flour dusted surface, use cookie cutter or form desired shape with your hands.

    NOTE: For my Russian friends: When cutting cookies if you roll out dough thick (8-10mm) then after they are baked these cookies resemble сырники (cheese pancakes).
